Veggie Burger Recipe

Ingredients

  • 1 large onion, chopped
  • 2 medium carrots, grated
  • 1 courgette, grated
  • 1 tbsp olive oil
  • 1.5 tsp chili powder
  • 1 tsp ground cumin
  • 1 tin kidney beans, drained and rinsed
  • 1 tin butter beans, drained and rinsed
  • 2 tbsp whole grain mustard
  • 2 tbsp tomato sauce
  • 2 tbsp soy sauce (or tamari if you have it)
  • 1.5 cups jungle oats
  • 8 cloves garlic crushed
  • 1 tbsp honey

Method

1. Cook onion, garlic, carrot and courgette in a hot pan with a little oil for 5 minutes – until soft – add chili powder and cumin and cook for a bit longer 2. Turn off the heat 3. Roughly mash the beans in a large bowl 4. Add cooked vegetable mixture, mustard, tomato sauce, soy sauce, oats and honey and mix together 5. Shape the mixture into patties - ±5 patties 6. Heat your frying pan with a little oil and fry OR bake the patties for approximately 8 minutes (4 minutes on each side) or until golden brown 7. Top your pattie with some freshly sliced tomato, rocket, red onion and place it on a bun! 8. Enjoy!! [printfriendly]
