Ratatouille (Wonderbag)

Ingredients:

  • 3tbsp olive oil
  • 1 ½ onions, diced
  • 3 garlic cloves, peeled and grated
  • ½ large aubergine, chopped into small squares
  • 4 courgettes, sliced and diced
  • 5 button mushrooms, chopped up into small squares
  • ½ red pepper, diced
  • ½ yellow pepper, diced
  • ½ green pepper, diced
  • 2 chilis, chopped into small pieces
  • 1 tin whole tomatoes, chopped up
  • 2tbsp soy sauce
  • 1tbsp Mrs. Balls chutney
  • Fresh basil leaves
  • Feta  
Method:
    1. In a large pot, add the olive oil, onions, chili and garlic and simmer for 5 minutes.
    2. Now add all the other vegetables and mix well
    3. Add the soy sauce and the Mrs. Balls and bring to the boil
    4. Place in the Wonderbag for 3 hours
    5. Serve topped with feta and basil – with rice, naan bread or a baked potato
