Dhal (Wonderbag)

Ingredients:

  • 1.5-cup fresh brown lentils
  • 1 stalk ginger
  • 2tbsp olive oil
  • 1tbso butter
  • 1 tin chopped tomatoes
  • 3 large tomatoes, chopped – remove pips
  • 1 large onion
  • 3 cloves garlic, grated
  • 1 chili, chopped
  • 2tsp ground cumin
  • 2tsp mustard seeds
  • 1ts cardamom pods
  • Fresh coriander 

Method:

  1. In a smaller pot add:
  • 5 cups lentils
  • 1 litre water
  • 1 stalk ginger, peeled and chopped
  • Boil the lentils until they are soft and then strain the water

 

  1. In a large pot add the following ingredients and allow to simmer for a few minutes (until the onions are soft):
  • 2tbsp olive oil
  • 1tbsp butter
  • 1 large onion chopped
  • 3 cloves garlic, grated
  • 1 chili chopped
  • 2tsp ground cumin
  • 2tsp mustard seeds
  • 1tbsp cardamom pods

 

  1. Now add the cooked lentils, the fresh tomatoes and the tin of chopped tomato
  2. Bring this mixture to the boil and the place it into your Wonderbag for 4 hours
  3. Serve on fresh basmati rice and top with fresh coriander
